Are citations for information, paraphrases, quotations, etc. used from a source in order to avoid plagiarism?

My specific example is this:
As I've said before, I am a conlanger - I invent languages - as a hobby. I creating one based off the Romance language family and am using Latin and Spanish dictionaries for help creating words. Do I have to cite these dictionaries and any other sources of inspiration/information somehow whenever I use the language? How would this even be done?

You haven't explained the context for the work you are doing. 

Citations are used to give credit for others' work, rather than claiming that work as your own.  Failure to do this can, in some contexts, be considered plagiarism.  This is not the same as a copyright violation, but most academic institutions, and some companies, have very specific and stringent guidelines for citations.  So depending on where you are doing your work, you'd be well advised to check the requirements.

The language is for personal use right now - just a hobby. I suppose I could potentially use it in a book or something one day. As I explained, I'm using the language dictionaries for help creating words resembling the Romance language family.
