I wanted to write a book recapping in detail a famous fighters fights, without their permissions for commercial purposes.
I was reading about likeness and Right of Publicity and started to get a little concerned that I could get in some trouble.

All  I would be doing is recapping specific fights, communicating to the audience exactly what happened in the fight.
Would this fall into  Right of Publicity or likeness laws? Since fighters names are used? Could there be a problem with the
the company who owns the rights to the fight?

I am aware of no "rights of publicity" or "likeness" that would prohibit you from recounting historical events in the manner you have described.  Just make sure you don't suggest that the book is endorsed by or affiliated with the persons it discusses.
