Does either the Berne or Paris Convention protect me if I talk to a Japanese company with an office in the USA regarding my patent pending invention?

Only if you file in Japan within one year of your US filing under the Paris Convention -- or if you file in Japan in the national phase of a PCT application filed within one year of your US filing under the Paris Convention.

Otherwise, no.

I think JimIvey may have understated the issue, at least as I understand your post.  Maybe he read it differently than I do.  These "conventions" only provide a protection for a priority date, after you have filed something in a contracting state.  The place where conversations took place should only impact local contract or unfair competion laws.
