Disney is currently applying to Trade Mark 'Snow White' and looks as if it will be successful.  would it be possible to use 'Snow White says' as a brand name (would be used on product categories which are part of TM application)?  Would it make any difference if we are in New Zealand as I can not understand whether a USPTO trademark applies globally or not.

US Trademark Rights do not extend beyond US borders, generally speaking.

You can use someone else's mark provided that (a) there is no likelihood of confusion, and (b) the other person's mark is not "famous" and therefore subject to dilution.
