I received a simple step counter in a cereal box which I could easily convert into a pedometer by measuring my average stride and determining the number of steps needed to reach certain distances.  Directions included with pedometers require a manual measurement, but they automatically convert into mileage rather than steps.  Would personally making a chart constitute patent infringement based on these pedometers on the market?

One does not infringe a device, only claims.  Without looking at claims, it's impossible to determine what infringes and what does not.  Beyond that, and based upon what you've posted, I can't imagine your conduct infringing anything.
