It's like any general, sweeping statement a person might make - there is some truth to it but not universally true. There probably is more of a tendency for larger firms to want trainees to come to speed as quickly as possible and lackers might not do as well as they might in a lower overhead smaller firm. Also, smaller firms for the most part have a lower billable hour requirement which probably would work better for your situation as a parent of a small child.
Not sure why your interviewer was so universally negative on those trainees that left other firms early on in their career. Sometimes there are acceptable reasons to leave an employer that should ,in general, not be looked upon negatively.
