Does anyone know if it would be illegal to show an email program such as Outlook or Outlook Express in a scene in a movie? If so any suggestions?

Assuming the copy of the program is properly licensed and it appears incidentally in a movie, you shouldn't have any problems.  The same might be true even if the appearance of the program forms a substantial part of the movie.
 
You may want to have an attorney review the details of your matter.
